Easy Eastern Stew

2 tomatoes – chopped in
quarters
2 courgettes – sliced
1 big potato – chopped in
cubes
2 onions – cut fine
3 cloves of garlic –
peeled and crushed or
chopped finely
Sprinkle of oil
Hot water
3 fingers of tomatoes
paste
1 teaspoon of all spice
1 teaspoon of cinnamon
¼ teaspoon of nutmeg
Sprinkle of salt and
pepper
A handful of Spinach
Coriander

Method:

– Put your hob on high heat and place a big cooking pot on top. Add some oil and wait a minute for it to heat up.
– Add the onions and the veg until they get nice and crisp – keep stirring them.
– Add a sprinkle of salt and black pepper
– Once the onions and veg are crispy add the tomatoes. Keep stirring until the tomatoes have becomes a moosh and integrated well with everything else.
– Add the garlic and stir well for few minutes.
– Add the spices ( cinnamon + nutmeg +all spice) + hot water and three fingers of tomato paste or 1 big table spoon.
– Leave to cook for 5 minutes.
– Add the spinach and fresh coriander for few minutes.

Serve and enjoy!
